Executive Pastry Chef Carrie Skromme has always made the pastry arts her desire ever since she was a child. Graduating from the Culinary Institute of America in the field of Baking and Pastry Arts gave Chef Skromme the education to feel compelled to jump into the life of a Restaurant Pastry Chef. After spending some years in restaurants including Lulu’s and Stars in San Francisco and opening Lila’s in San Diego, she decided to get into the world of Culinary Education.

Chef Skromme began teaching at the California School of Culinary Arts in Pasadena in 1999. She taught both Intro to Baking and Advanced Pastry Arts as well as Supervisory Development, an academic class. In 2000 the CSCA became part of the Le Cordon Bleu program and after moving up the ladder to Department Chair of the Introduction to Baking and Pastry Arts, Chef Skromme decided that after almost 4 years of teaching she wanted to get back into the Industry.

New York Food Company "Sweet Endings"
Most recently, Chef Skromme developed the Pastry division of New York Food Company’s, “Sweet Endings” as the Executive Pastry Chef. The New York Food Company, a full-service operation in Manhattan Beach CA, with three wedding venues and an off-premise department, gave her an opportunity to start a scratch menu as well as a wedding cake department. The department was responsible for wedding cakes at all 3 venues and off-site catering events. Chef Skromme and her team also were responsible for all in-house pastries for both corporate and catered events.

Historical Fire House in Julian, CA
In 2003 the Historical Fire House Building of Julian, California became the business location for Candied Apple Pastry Company. Chef Carrie developed scratch production in all styles of the Pastry Arts: Wedding Cakes, Chocolates, Breads, Pastries, Centerpieces, Catering, and Beverages.

In the mountain community of Julian, you will find Chef Carrie creating a fresh full menu of sweet things that are irresistible. Come in for a cup of fine coffee, espresso, latte, select a pastry to savor and then order a dessert for that special occasion.
